KENTUCKY'S CHOICE HOMEGROWN BEEF and 
ST. CATHARINE FARM

St. Catharine Farm and the members of Kentucky's Choice Homegrown Beef have been working together for two years and are now ready to market their beef.  Consumers are concerned about the quality and safety of the food they are eating.  We are committed to providing high quality, homegrown, antibiotic, steroid and hormone free beef to our consumers.

We have been working with the University of Kentucky, Rick Greenwell (Extension Office), Benji Mikel (certified USDA grader) and the Kentucky Department of Agriculture.  Their advice and services have been invaluable.

Our calves have electronic identification tags (EID tags) and are source verified.  They are fed crops raised on our own farms.  These calves are raised on our farms, bred from our own cows, not bought from a stockyard.  Our goal is to have a consistent product with every beef being of top quality, tender and delicious.

All our calves are under 30 months of age, most being 14 to 18 months old when processed to make the most tender beef.  Only finished cattle grading choice are sold to our consumers.  Our beef is USDA inspected and graded at Central Kentucky Custom Meats located in Casey County, Kentucky.  This is a very clean facility and is said to be the very best in Kentucky.  They do a wonderful job of processing and vacuum packing our beef.  By vacuum packing we can preserve the quality and freshness of the beef for a longer period of time.

Our beef is currently being sold at Kentucky Heritage Meats in Louisville.  This store is owned by Johnny Medley.  Our beef is also sold to some of the finest restaurants.  We also served our beef to 16 local factories during the SWEDA Tour.  We have donated our beef to help raise money for a scholarship fund and also to the St. Catharine Golf Tournament auction.  The group has received positive feedback for the high quality and sense of community spirit that was shown when we cooked and served at local events.
